The light in the door handles, centre console and on the dash in the demo car I am in is blue. Can this be changed via the dash settings?

Yes, it's one of the buttons in the main menu, Background.

Note that on the pic shown immediately above, you can scroll the RHS slider down and there's another row of "tiles" below! Includes stuff like "Legal" which no-one is going to read, ever,... but also some possibly-useful stuff. There are a few other screens around where a very slim short bar shows right at the edge of the screen, easy to miss. Swipe these, and other goodies appear!

I missed that there is a small bar at the top, and you can swipe downwards to reveal more options.

You can also customise what appears on that bar, it’s almost a ‘favourites’ bar.
