Is there a way to enable some sort of "crawling" in the passat gte in EV Mode to allow small maneuvers when parking?

Similar to releasing the brake in an automatic/ controlling the clutch in a manual.

I'm not sure what you mean, as all VW GTEs will default to "crawling": meaning will move off slowly when you release the brake.

They will only stay in place, at the release of the foot brake, only if they have the "AutoHold" function enabled.

Ok, that's probably it I will give it a try. The car was delivered to my address so the dealer possibly enabled it.

The other thing you can do (if you keep auto hold switched on) is lightly press then release the accelerator, it should release the brake and start crawling.
