I think we are agreed that the accelerator pedel on an EV needs to be handled gently for most comfortable use and a number of EVs have 'one pedal' driving.

Has anybody used/converted to hand controls which allow a more finessed operation and more relaxed driving?

I haven't attuned myself to it fully, but the kona can be driven with one foot driving, as you indicate. Quite amazing to never need to touch the brake pedal (except in emergency & junctions.) Beyond that even the accelerator pedal can be ignored once cruise control is activated with the car maintaining a gap to the car in front, including stopping if that car stops as well as pulling away back to cruise speed when that car moves off.

No experience of it myself but this may be of interest to you as it chives a couple of different hand control conversions on the e-Niro
