Why not, does it limit the functionality or is it just a general recommendation?
It is a general recommendation. There are potential issues regarding the water-tightness of the connection between the two cables, particularly if the user leaves the connection on the ground where a puddle might form and hence the connection would be submerged.

It’s probably a disclaimer more than anything else. Basically you’re on your own if blow your charger, your fuse board and your car.

Ohme came back and confirmed that it would work, but there could not warrant that it does. Fair enough, considering that it involves a third party extension lead.
Will check with EVCables whether they have any experience, apparently they guarantee that their extension cables work.
