larger capacity batteries seem to be expensive (£4-5k) but I wonder if one removed from a Nissan Leaf (30kwh about £250 on ebay) or other type of EV could be used?

Where would I find technical information about Twizy and other EV's?

Conversions to LEAF modules have been done, for example this documented case in Germany:

Take a look at the ZeroEV youtube channel - They've been working on a Twizy transplant using a Golf GTE battery, giving it 100bhp!
