I tried using other websites that allow you to "sign in using Google" as advised in every other thread I've found while searching, many said try Plex or medium.com, and then if you launch YouTube you'll be signed in.

This still doesn't work, constantly getting the "couldn't sign you in... browser not secure" message even with other sites, not just YouTube.

So the car's browser and YouTube doesn't let me, what else can I do?

I’ve always found the ‘Plex’ method to work fine for me?

Are you sure you’re following the instructions correctly? I’ll fine the website/video I’ve followed if that helps?
Whatever I try, it doesn't work. The video would be appreciated. Obviously I can still use YouTube while not logged in, but it'd be nice to watch my subscriptions!

That’s the video I’ve used and never had a problem. It tends to throw you out after software updates, so always handy to keep so you remember how to do it! I agree, I like to stay signed in so I can find the videos I want to watch if and when I use the car to watch them 👍🏻
I did it by logging into:
using the Google credentials option. It does not need to be a successful login. After that, I went to the YouTube app and the login process worked normally.
